BALI – Jembrana

This chocolate is from Kerta Semaya Samaniya cooperative, the first organic certified cacao bean from South-East Asia.The uniqueness of the flavor comes from the combination of its geological location and its distinct climatic conditions.

What to expect:

  • Richer and fruitier flavor profiles compared to other chocolates
  • Sweeter than other dark chocolates due to the sweetness of the beans themselves

Origins:

  • The 30-feet tall cacao bean trees found in Bali, were brought over to Indonesia by the Dutch reputedly from Soconusco in Mexico

BELIZE – San Antonio

San Antonio is one of the larger Mopan Maya-speaking communities in the Toledo District, where the climate is very suitable for producing high-quality cocoa beans. The beans in this chocolate come from a cooperative of 3rd and 4th-generation cacao farmers who focus on organic and sustainable growing practices.

Contains notes of:

  • Dried fruits like plum and tart cherry
  • Jasmine
  • A mild, creamy nuttiness

Origins- Belize:

  • Nestled between the Caribbean Sea, Mexico, and Guatemala
  • Influenced by cocoa varieties from South America to Mexico

DOMINICAN REPUBLIC – San Francisco De Marcoris

San Francisco de Marcoris is the center of cocoa beans production in the Dominican Republic. We only source beans from the COOPCANOR cooperative because it is in a zone where there is an exceptional mix of varieties of cocoa trees which produce beans with an enchanting taste profile.

What to expect:

  • subtle fruity notes of mango, apricot & cranberries
  • creamy flavor
  • bold explosion of fruity sweetness with a well-rounded finish

  • located between the Caribbean Sea and the North Atlantic Ocean

EL SALVADOR – Cacahuatl

This chocolate is from a very small cooperative of cocoa farmers made up of 8 men and 8 women. We were impressed by its intense fruity flavors imparted by the unique ecological microclimate where they grow. This bean was selected after a rigorous sampling of beans from various cooperatives in El Salvador.

What to expect:

  • fruity, earthy, and nutty flavors
  • earthy and deep with a malty, almost mocha-like finish
  • notes of honey, banana, and toasted walnut

Origins:

  • Central America, bordered by the Pacific Ocean, Guatemala and Honduras

HAITI – Grande Riviere Du Nord

The cocoa beans used to make this chocolate is harvested from cocoa trees growing in the rich alluvial plain of the Grande Riviere du Nord in Haiti. The cooperative of the same name processes it under the guidance of the “AVSF”, Agronomists & Veterinarians Sans Frontières, to bring out its unique flavor.

What to expect:

  • very rich and fragrant cocoa with a very chocolatey flavor
  • light overtone of citrus

  • located between the Caribbean Sea and the North Atlantic Ocean
